A Message from the Manager

Hi everyone!

It’s our 8th New Year! We’ve been going strong for over 8 years now! I think I’ll start this year by saying thank you!! Thanks for coming in every day! Thanks for telling us what you want to see on the shelves of your co-op! We’re grateful for the opportunity to grow and evolve with your taste. I’m grateful for the time I’ve gotten to spend in our little South Coast bubble. I have serial dialogue with so many of you, and it’s exciting to play a bit part in the intertwined lives of this tiny city. I look forward to the daily turning of the page. 

As far as 2018 goes, we’re off to a great start! Last years weather had some heavy impact on our community, and the surrounding communities. We’re meeting a lot of people that are displaced, and welcoming a new wave of people into our neighborhood. Our membership continues to grow, and sales are already up from last year! We’ve solidified the panini menu, and are getting ready to start prepping the old bar counter from the Record and Bookends. It will be a beautiful replacement for the barista corner. Hoping to get that project done mid February!

We are still looking for Artists to fill our cafe gallery walls for 2018. If you’d like to be considered, please send an email to our Board of Directors Vice President, Ginny Wyatt. Her email is gntwyatt@yahoo.com. Please introduce yourself, and include some pictures of your work. We’re going to spend a lot of energy revitalizing the look of the market this year. We’ll be making the layout more intuitive, add signage, and redesigning our shelf tags to be easier to read. A few pieces of equipment need upgrading as well, so we’d love it if our membership would pass on the wonderful customer experience we strive to deliver, and encourage some of your friends and family to join the co-op as well! Member equity is the best way to improve the market. Remember it’s your co-op, and if we take care of it together, it’ll last for generations in this community.

Easy Sweet Potato Ramen Recipe

Add fresh mushrooms, corn, carrots, and bok choy for a veggie-loaded noodle bowl that's naturally sweet.

SERVINGS: 4


Ingredients:

  • 1 Tbsp sesame oil
  • 2 cloves garlic, minced
  • 3 tsp freshly grated ginger
  • 2 c mushrooms, sliced
  • 1 head bok choy or cabbage, thinly sliced
  • 2 lg carrots, thinly sliced
  • 1 lg sweet potato, cooked and cut into 1" cubes
  • I package of Lotus Foods Rice Ramen
  • 4 scallions, thinly sliced
  • 2 Tbsp hot sauce
  • 2 Tbsp fresh cilantro, finely chopped
  • Sea salt and pepper, to taste

Directions:

1. HEAT the sesame oil in a large skillet over medium low heat. Add the garlic and ginger; stir fry for 3-4 minutes or until tender. Add vegetable broth and water to desired broth level (from Ramen packet). Lower heat to a simmer and add mushrooms, bok choy, carrots, and sweet potatoes. Cook for 15 minutes or until veggies are tender. Add noodles and cook for another 5 minutes or until noodles are soft.

2. ADD scallions and hot sauce. Remove from heat; garnish with cilantro and serve warm. Season to taste with sea salt and pepper.

NUTRITION (per serving) 240 cal, 8 g pro, 46 g carb, 7 g fiber, 7 g sugars, 3.5 g fat, 0 g sat fat, 530 mg sodium
