I hope everyone is enjoying the fall season. We’re getting ready for the holidays and taking pre- orders on natural and organic turkeys for Thanksgiving. Keto/Paleo Mashed "Potatoes"
prep 15 mins, cook 15 mins, total 30 mins, yields 3 servings
Ingredients:
- 1 head of cauliflower
- salt and pepper to taste
- 2 tablespoons of grass fed butter
- 1-2 cloves of garlic optional. (You can substitute garlic for fresh dill or do both!)
- parsley for garnish
Optional Ingredients:
- Spices -- Turmeric, dill, Italian Herbs such as oregano, thyme, basil, etc.
- You can substitute the grass-fed butter with grass-fed ghee or virgin coconut oil
- Raw grass-fed cheese sprinkled on top
Directions:
Step #1: Steam cauliflower until soft (boil is not recommended b/c most nutrients are lost).
Step #2: Chop cauliflower and put in food processor or blender with butter, salt, pepper and garlic and other spices if desired.
Step #3: Blend to desired consistency. Garnish with parsley!
