Manager's Report

Dear Community,

As summer kicks up we are loving all the gorgeous fruit and local produce making its way onto our shelves. We are also well stocked with what y’all will need for the perfect barbecue! Please check it all out whenever you’re in the store, and we thank you very much for following our safety protocols as this pandemic continues on. 

Last week in our board meeting we agreed on priorities for utilizing our recently received Economic Injury Disaster Loan (EIDL) funds. The EIDL money must be used for operational costs, such as vendor payments, payroll, rent, and utilities. That will leave us with a significant amount of extra cash to spend from our sales. We are going to prioritize replacing equipment, building up our cash reserves for the winter slowdown, paying down some of our higher-interest debt, and renovating the cafe. In addition, we have budgeted to leave a portion unallocated for now so that it’s available down the road as our long-term needs become more clear. 

As mentioned in last month’s letter, we are initiating a strategic planning process at the co-op. Our hope is that we will get significant input from you all, our co-owners and community members! Expect an email from us in the next few weeks with more details on this. In the meantime, start thinking about your biggest, wildest, hopes for the future of the co-op and its role in our community.

The cafe remains closed to the public for the near future due to concerns for the safety of our staff and community. We will be continuously evaluating the situation and will let you know when we plan to re-open the cafe.

Tigernut Flour Cookies

These may seriously be the best gluten-free chocolate chip cookies I've ever had! These Tigernut Flour Cookies have delicious crispy edges with perfect chewy centers. Everything you need from a chocolate chip cookie!

Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes
Makes 12 cookies


  • 1/3 cup cane sugar or coconut sugar, muscovado, etc.
  • 1/4 cup butter melted (or coconut oil)
  • 1 egg (or 1 TBSP flax meal mixed with 3 TBSP water)
  • 2 tsp vanilla extract
  • 1-1/2 cups tigernut flour 
  • 1/4 tsp sea salt
  • 1/4 tsp baking soda
  • 1/4 cup dark chocolate chips


  1. In a medium bowl whisk together sugar, melted butter, egg, and vanilla extract. Either by hand or with an electric hand mixer.
  2. Add tigernut flour, sea salt, baking soda and stir in until combined. Fold in the chocolate chips/chunks and chill the dough in the fridge for about 1 hour.
  3. Preheat your oven to 350° F. Line a baking sheet with parchment paper.
  4. Once chilled, scoop 12 cookie dough balls and place them on the prepared baking sheet. Top with a few more chocolate chips.
  5. Bake the cookies for 12-15 minutes until the edges are just set. Don't overbake them. Leave the cookies on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
